Shiso is a Japanese herb — aromatic, mildly spicy, with a character that hovers somewhere between mint and basil. For the Shiso Smokey, the brewers at Dok use two different smoked shiso infusions: one in the whirlpool during brewing, and one during maturation. A technique that builds the flavor layer by layer and lets the herb speak at two completely different moments.
The result is a dark, layered smoked brown porter that envelops you immediately. Chocolate and hazelnuts carry the flavor, while the subtle smoke from the smoked shiso adds an intriguing, softly spicy accent. No bulky smoky taste, but a refined balance that surprises you time and again.
This is the beer for when the evenings get shorter and you want to drink something that really means something.
